You know how I know cauliflower rice is the bomb? Even Bri likes it. And that’s saying something.
But for real, cauliflower is probably the most versatile vegetable and ricing it is one of the best ways to prepare it! I love to make a huge batch of cauliflower rice and use it as the base for multiple dishes throughout the week. You can make it with different combinations of flavors to pair with your dishes. I’ll start with a base recipe and then give you some ways to change it up.
- Roughly chop one head of raw cauliflower and pulse it in a food processor or blender until it looks like rice. You can also buy pre-made cauliflower rice at Whole Foods or Trader Joe’s!
- Heat 1-2 tablespoons of cooking fat (I usually use ghee or avocado oil, depending on the flavor I want) in a large cast-iron skillet or pan over medium-high heat.
- Add the raw cauliflower rice and cook for 5-10 minutes, until soft. While it is cooking, stir in 1/2-1 teaspoon sea salt and any other herbs/spices you are using (see ideas below).
- Enjoy!
Some of my favorite ways to flavor it:
Turmeric: add 1/2-1 teaspoon of turmeric while cooking (use ghee for cooking)
Garlic: add 1/2-1 teaspoon of garlic powder while cooking (use ghee for cooking)
Cilantro Lime: when the rice is cooked, stir in 1/4 c chopped cilantro and the juice of one lime (use avocado oil for cooking)
